salsa chicken tacos
makes 8 soft tacos

ingredients
- 2 boneless, skinless chicken breats, rinsed and patted dry
- 1 20 ounce jar of salsa {i like pace for this kind of thing}
- 1 can diced green chiles
- 1 cup water
- 8 corn tortillas
- cheddar cheese, grated {garnish}
- lettuce, sliced {garnish}
- pico de gallo or store bought salsa {garnish}
- sour cream {garnish}
- cilantro {garnish}
directions
- in a crockpot, add the chicken, jar of salsa, green chiles and water. cook on low for 3-4 hours. when cooked, scoop chicken {not liquid} into a bowl and shred with a fork. the chicken will pull apart very easily into nice shredded pieces.
- warm your tortillas. place a small spoonful of chicken into each tortilla in the center. add desired garnishes. serve immediately.
i served these with some good old rice-a-roni mexican rice!
